Ingredients

  • 200 g (1 1/2 cups) all-purpose flour
  • 100 g (1/2 cup) brown sugar, packed
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 115 g (1/2 cup) unsalted butter, softened
  • 2 large eggs (approx. 100 g)
  • 120 ml (1/2 cup) milk
  • 80 ml (1/3 cup) maple syrup, plus extra for serving
  • 1 tsp vanilla extract
  • 100 g (1 cup) chopped walnuts, toasted

For the maple glaze, you will need:

  • 60 ml (1/4 cup) maple syrup
  • 15 g (1 tbsp) unsalted butter
  • 30 g (1/4 cup) brown sugar

Instructions

  1. Preheat your oven to 175°C (350°F) and grease an 8-inch square baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a larger bowl, beat the butter and brown sugar until creamy, then add eggs one at a time, mixing well. Stir in vanilla extract and maple syrup.
  3. Gradually mix the dry ingredients into the butter mixture, alternating with the milk, and fold in the chopped walnuts.
  4. In a small saucepan, combine maple syrup, butter, and brown sugar for the glaze, heating gently until melted and combined.
  5. Pour the cake batter into the prepared pan and drizzle the warm maple glaze over the top. Bake for 35-40 minutes, checking for doneness with a skewer.
  6. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Serve warm with extra maple syrup if desired.
