- 200g (1 cup) pitted dates, chopped
- 150g (3/4 cup) unsalted butter, softened
- 150g (3/4 cup) brown sugar
- 3 large eggs
- 1 tsp vanilla extract
- 150g (1 1/4 cups) all-purpose flour
- 50g (1/2 cup) almond flour
- 1 tsp baking powder
- 1/4 tsp salt
- Zest of 1 large orange
- 100ml (1/2 cup) orange juice
- 1/4 tsp saffron threads
For the saffron syrup, you will need:
- 80g (1/3 cup) sugar
- 80ml (1/3 cup) water
- 1/2 tsp saffron threads
- 1 tbsp orange juice
Instructions
- Prepare the dates and oranges by chopping the dates and zesting and juicing the orange.
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract and orange zest.
- In a separate bowl, combine the all-purpose flour, almond flour, baking powder, and salt. Gradually fold this dry mixture into the wet ingredients, then add chopped dates and orange juice, stirring until smooth.
- Pour the batter into a prepared 8-inch round pan and bake in a preheated oven at 350°F (175°C) for 35 to 40 minutes. Check for doneness with a toothpick.
- While the cake cools, prepare the saffron syrup by combining sugar, water, saffron threads, and orange juice in a saucepan. Bring to a gentle boil, then simmer for about 5 minutes until slightly thickened.
- Once the cake has cooled slightly, remove it from the pan and pour the warm saffron syrup over it. Let it soak in before serving.
Notes
- Use Medjool dates for the best flavor and texture.
- Consider adding nuts or spices for extra flavor.
- Store leftovers wrapped at room temperature for up to three days or refrigerate for up to a week.
