Description

Ingredients

  • 200g (1 cup) pitted dates, chopped
  • 150g (3/4 cup) unsalted butter, softened
  • 150g (3/4 cup) brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 150g (1 1/4 cups) all-purpose flour
  • 50g (1/2 cup) almond flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Zest of 1 large orange
  • 100ml (1/2 cup) orange juice
  • 1/4 tsp saffron threads

For the saffron syrup, you will need:

  • 80g (1/3 cup) sugar
  • 80ml (1/3 cup) water
  • 1/2 tsp saffron threads
  • 1 tbsp orange juice

Instructions

  1. Prepare the dates and oranges by chopping the dates and zesting and juicing the orange.
  2. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract and orange zest.
  3. In a separate bowl, combine the all-purpose flour, almond flour, baking powder, and salt. Gradually fold this dry mixture into the wet ingredients, then add chopped dates and orange juice, stirring until smooth.
  4. Pour the batter into a prepared 8-inch round pan and bake in a preheated oven at 350°F (175°C) for 35 to 40 minutes. Check for doneness with a toothpick.
  5. While the cake cools, prepare the saffron syrup by combining sugar, water, saffron threads, and orange juice in a saucepan. Bring to a gentle boil, then simmer for about 5 minutes until slightly thickened.
  6. Once the cake has cooled slightly, remove it from the pan and pour the warm saffron syrup over it. Let it soak in before serving.

Notes

  • Use Medjool dates for the best flavor and texture.
  • Consider adding nuts or spices for extra flavor.
  • Store leftovers wrapped at room temperature for up to three days or refrigerate for up to a week.
