Description

A moist and flavorful cake made with almond flour and passionfruit, topped with a citrus glaze.


Ingredients

  • 1 cup (120g) almond flour or finely ground almonds
  • 1 cup (150g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon (optional)
  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup (60ml) milk
  • 1/2 cup (120ml) passionfruit pulp
  • Zest of 1 orange
  • 1/4 cup (60ml) citrus glaze (orange or lemon)
  • 1/4 cup (30g) sliced almonds

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing it and lining the bottom with parchment paper.
  2. In a medium bowl, whisk together the almond flour, all-purpose flour, baking powder, baking soda, salt, and optional ground cinnamon.
  3. In a large bowl, cream together the softened butter and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, milk, and passionfruit pulp.
  4. Gradually fold the dry ingredients into the wet mixture until just combined. Stir in the orange zest.
  5. Pour the batter into the prepared cake pan, smooth the top, and sprinkle sliced almonds on top. Bake for 45-55 minutes, checking for doneness at 40 minutes.
  6. While the cake is baking, prepare the citrus glaze by mixing it until smooth.
  7. Once the cake is done, let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Drizzle the citrus glaze over the top before serving.
