- 1 cup (120g) almond flour or finely ground almonds
- 1 cup (150g) all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp ground cinnamon (optional)
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) brown sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/4 cup (60ml) milk
- 1/2 cup (120ml) passionfruit pulp
- Zest of 1 orange
- 1/4 cup (60ml) citrus glaze (orange or lemon)
- 1/4 cup (30g) sliced almonds
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing it and lining the bottom with parchment paper.
- In a medium bowl, whisk together the almond flour, all-purpose flour, baking powder, baking soda, salt, and optional ground cinnamon.
- In a large bowl, cream together the softened butter and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, milk, and passionfruit pulp.
- Gradually fold the dry ingredients into the wet mixture until just combined. Stir in the orange zest.
- Pour the batter into the prepared cake pan, smooth the top, and sprinkle sliced almonds on top. Bake for 45-55 minutes, checking for doneness at 40 minutes.
- While the cake is baking, prepare the citrus glaze by mixing it until smooth.
- Once the cake is done, let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Drizzle the citrus glaze over the top before serving.
