Ingredients

  • 1 1/2 cups (225 g) pitted dates, chopped
  • 1 cup (240 ml) boiling water
  • 1 teaspoon baking soda
  • 1/2 cup (115 g) unsalted butter, softened
  • 1 cup (200 g) brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190 g) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt

For the caramel sauce:

  • 1/2 cup (115 g) unsalted butter
  • 1 cup (200 g) brown sugar
  • 1 cup (240 ml) heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the dates by chopping them and soaking in boiling water with baking soda for 10 minutes.
  2. In a mixing bowl, cream together softened butter and brown sugar until light and fluffy. Add eggs one at a time and mix well, then add vanilla extract.
  3. Gently fold in flour, baking powder, and salt, then add the soaked dates and their liquid.
  4. Pour the batter into a prepared cake pan and bake at 350°F (175°C) for 35-40 minutes, or until a toothpick comes out clean.
  5. While the cake cools, prepare the caramel sauce by melting butter, then adding brown sugar and heavy cream. Simmer for 5 minutes and stir in vanilla extract.
  6. Serve the cake warm, drizzled with caramel sauce, optionally with ice cream or whipped cream.
