Description

The Swedish Princess Cake, or ‘Prinsesstårta,’ is a delightful dessert known for its beautiful layers and vibrant green marzipan covering. It consists of a light sponge cake filled with raspberry jam and whipped cream, topped with a charming pink marzipan rose.


Ingredients

  • 4 large eggs
  • 1 cup (200 g) granulated sugar
  • 1 cup (125 g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (120 ml) whole milk
  • 1/2 cup (120 g) unsalted butter, melted
  • 1 cup (240 ml) heavy whipping cream
  • 1/2 cup (120 g) raspberry jam
  • 1 pound (450 g) green marzipan
  • 1 small pink marzipan rose
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
  2. In a large mixing bowl, beat the eggs and granulated sugar until pale and fluffy.
  3. Sift together the flour, baking powder, and salt, then fold into the egg mixture.
  4. Gently fold in the melted butter and whole milk until just mixed.
  5. Pour the batter into the prepared cake pan and bake for 25-30 minutes.
  6. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  7. Whip the heavy cream until soft peaks form and set aside.
  8. Once cooled, slice the cake in half horizontally and spread raspberry jam on the bottom layer.
  9. Add a layer of whipped cream on top of the jam, then place the top half of the cake back on.
  10. Roll out the green marzipan and cover the assembled cake, smoothing it down to eliminate air bubbles.
  11. Decorate with the pink marzipan rose and dust with powdered sugar before serving.
