The Swedish Princess Cake, or ‘Prinsesstårta,’ is a delightful dessert known for its beautiful layers and vibrant green marzipan covering. It consists of a light sponge cake filled with raspberry jam and whipped cream, topped with a charming pink marzipan rose.

- 4 large eggs
- 1 cup (200 g) granulated sugar
- 1 cup (125 g) all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (120 ml) whole milk
- 1/2 cup (120 g) unsalted butter, melted
- 1 cup (240 ml) heavy whipping cream
- 1/2 cup (120 g) raspberry jam
- 1 pound (450 g) green marzipan
- 1 small pink marzipan rose
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
- In a large mixing bowl, beat the eggs and granulated sugar until pale and fluffy.
- Sift together the flour, baking powder, and salt, then fold into the egg mixture.
- Gently fold in the melted butter and whole milk until just mixed.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Whip the heavy cream until soft peaks form and set aside.
- Once cooled, slice the cake in half horizontally and spread raspberry jam on the bottom layer.
- Add a layer of whipped cream on top of the jam, then place the top half of the cake back on.
- Roll out the green marzipan and cover the assembled cake, smoothing it down to eliminate air bubbles.
- Decorate with the pink marzipan rose and dust with powdered sugar before serving.
